Things I am loving…

Hi everyone! Here are some things that I am seriously loving this week!

I am in love with @bodyposipanda!!! She is so full of positivity and color, self-love and body positivity education. She is brave, brilliant, and truly inspirational. I have been having a hard time lately loving my body and I need people like this in my life to pull me out of this hate cycle.

I am interested in learning how to use nail stamps and these are so pretty and perfect for me. You can find these stamping plates here but definitely check out all the other designs that this website has to offer. BONUS: They have the very coveted Nail Chrome powder that people are losing their minds over!

One of my favorite songs from Hamilton is “Schuyler Sisters” and the girls sing along with me. I think that this is an awesome sweatshirt for someone who loves Hamilton!

Raspberry Hand Pies

Mmmmmm pies…. seriously, is there anything better than a fantastic pie? Today the girls and I went raspberry picking at a local farm that we go to every summer and picked two large quarts of yummy red tart berries. I knew right away that I wanted to try my hand at making hand pies and am so happy with how they came out. Here is my recipe for Raspberry Hand Pies!!

Ingredients (Makes approx. 5 pies):

  • 2 Pillsbury Pie Crusts (or any pre-made pie crust that is in a roll, not already in a pan)
  • 3 cups of raspberries
  • 4 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla
  • 1 egg
  • 1 tablespoon water

To make the glaze:

  • 1 1/4 cup powdered sugar
  • 2 Tbsp milk

Let’s get baking!!!

Begin by preheating your oven to 400 degrees F. Line a baking sheet with a silicone mat or parchment paper and set aside.

Next, in a medium bowl, combine strawberries, sugar, cornstarch, and vanilla and set aside.

Working with half of your prepared pie dough at a time, on a lightly floured surface, roll out the dough until it is about 1/8 inch thick. Using a 6-inch cookie cutter (or round bowl or plate with a 6-inch diameter), begin cutting out your rounds. Repeat with the remaining half of the dough. Form any excess dough back into a ball, roll out and cut again. Repeat this until you’ve used as much dough as possible. I got about 5 pies cut but you can use a 4inch circle cutter and get more than that.

With all of the rounds cut, in a small bowl, whisk together the egg and water. Lightly brush this around the edges of each pie dough round. Then, place about 2 – 3 tablespoons of the strawberry filling onto one-half of each round. Fold the opposite side of the dough round over to enclose forming a half circle. Using a fork, gently press the edges together to seal; then pierce the top of each pie to allow any steam to escape. Brush the tops of each hand pie with the egg wash.

Bake for about 15-20 minutes until the pies are golden brown. Transfer the pies to a wire rack to cool before adding the glaze.

Weekend Faves

 

I am kind of obsessed with this song. I am auditioning for a musical on Tuesday and needed to choose something in the style of the musical, a Disney musical, so I went for something outside of the box and in my voice range. (There are tons of deleted Disney songs if you are curious)

As a glasses wearing girl (at least on non-sunny days, of which there are plenty of in Cleveland) I have quite a collection. I use my vision insurance to pay for contacts and then buy my glasses online at places like glasses.com and warbyparker.com typically, but eyebuydirect.com has definitely caught my eye with their low prices. These in particular really make my heart go pitter patter! Check them out here!

bullet journal

I finally got my bullet journal up and going and I love it! I love how it’s super flexible and yet keeps me on top of my goals and tasks. More pics to come soon I am sure!

OMG you guys…. Unicorn Ice Cream!!! I saw this recipe on Facebook and knew that I had to make it with the girls… after all, we are all about rainbow food and unicorns.  😉  The recipe is super easy, like I’m pretty sure anyone can make this. And it is soooooo yummy! Check it out here!

My Life in 5

strength

Trying: to sort through a whole bunch of personal nonsense. Actually it’s not nonsense, it’s quite serious, but I’m still in the thick of it and if I feed the issue any more of my time, energy, and emotion I am afraid I will really become a train wreck. I created the graphic above as a mantra for when I really feel like quitting would just be easier on everyone… sigh.

Anticipating: the fall when I am back to a normal schedule of dance and homeschool. I can’t wait to have a rhythm to my week again!

Listening: to Spotify! OMG am I an addict! I listen to everything from the stand-up comedy of Gabriele Iglesias to the awesome sounds of the Piano Guys. There’s seriously music to fit every mood and I love it…. it makes finding new dance music pretty fun too!

Eating: not too much these days, lol. I’ve been trying to lose weight and since exercising isn’t the issue, my eating habits are probably the culprit. So I’ve been cutting my portions in half (I’m 4’10… do I really need full grown man sized portions?!), trying not to eat out of boredom, and being really mindful about what I eat.

Reading: a very cool cook book called What to Cook & How to Cook It. It’s a super cool cookbook that lays out all the recipes in a simple, clean cut way. I love that there are not a ton of ingredients needed and that all the recipes are normal and not “gourmet” complicated.

Friday Favorite Five

Oh. My. Goodness. I cannot stress how happy I am that this week is over. What a looooooong friggin’ week! Sigh…. I am in a slightly cranky mood thanks to the weather, my children’s cleaning habits (or lack thereof), and am just over the cold/grey/tundra that is Cleveland OH. So to brighten up the mood here are my Friday Favorite Five!!

2.  My new rugged Ballerina flats by Keen- I am in LOVE with these! Not only are they pretty and comfortable but they are practical for running errands and playing with the girls. You can get yours here!

3. I am loving this color scheme, so fresh and fun. I think it would be perfect in a kitchen or a half bath!
